How we drink ours

Ceremonial

Hikari, hot water, a chasen. The way matcha has always been drunk. Bright, vegetal, gently sweet.

Ingredients

  • 3g Hikari matcha
  • 60ml hot water, 80°C
  • A warmed matcha bowl

Method

  1. 01 Sift 3g of Hikari into a warm bowl to break up any clumps.
  2. 02 Pour 60ml of water just off the boil, allowed to cool to 80°C.
  3. 03 Whisk briskly in a W or M motion for 15 to 20 seconds, until a fine, even foam covers the surface.
  4. 04 Drink immediately, while the foam is still bright.
