How we drink ours
Ceremonial
Hikari, hot water, a chasen. The way matcha has always been drunk. Bright, vegetal, gently sweet.
Ingredients
- 3g Hikari matcha
- 60ml hot water, 80°C
- A warmed matcha bowl
Method
- 01 Sift 3g of Hikari into a warm bowl to break up any clumps.
- 02 Pour 60ml of water just off the boil, allowed to cool to 80°C.
- 03 Whisk briskly in a W or M motion for 15 to 20 seconds, until a fine, even foam covers the surface.
- 04 Drink immediately, while the foam is still bright.
Just powder, water, and a chasen. The way matcha was drunk for centuries. No milk, no sugar, no fuss.
