01 · MATCHA & FRESHNESS

Our matcha.

How long does an opened tin stay fresh?

Sealed and stored in a cool, dark place, an opened tin keeps its brightness for about four weeks. Refrigerated, six.

What is the difference between Hikari, Shōgun and Hōjicha?

Hikari is light and sweet, Shōgun is bold and full-bodied, Hōjicha is roasted and naturally low in caffeine.

Is your matcha organic?

No. Our Uji tea house is JAS-certified and does offer an organic line, but the matcha we chose isn't from it. We went with the one we thought tasted best.

Where is your matcha from?

Uji, Kyoto. First harvest, milled monthly at our partner tea house.

How do you keep matcha fresh during shipping?

Sealed tins, vacuum-packed inner sachets, and a short window between mill and dispatch.

What grade is your matcha?

All three of our matchas are ceremonial grade. Hōjicha is a separate roasted style.

How much caffeine is in matcha?

A 2g bowl of matcha holds roughly 60mg of caffeine, against 90mg to 110mg in a typical cup of filter coffee. Published measurements put matcha between about 19mg and 44mg per gram, so a bowl can land anywhere from 38mg to 88mg depending on the harvest and how heavily you dose it. First-harvest matcha like ours sits at the higher end of that range, so it is not a low-caffeine drink. A 3g bowl of Shōgun is closer to a coffee than most people expect. Hōjicha is the lowest of our three teas because it is roasted.

Which matcha should I buy first?

Hikari. It is smooth, naturally sweet and high in umami, which makes it the easiest place to start. Shōgun is deeper, bolder and nuttier, and it holds through milk. Hōjicha is roasted and toasty, low in caffeine, and better suited to evenings.

What is ceremonial grade matcha?

First harvest, shade-grown leaf, stone-milled to a fine powder. It is made to be drunk with hot water rather than cooked with. All three of our teas are first harvest from one tea house in Uji.

What is the difference between matcha and green tea?

With green tea you steep the leaves in hot water and throw them away. With matcha the leaf is ground into a fine powder and whisked into the water, so you drink the whole thing.

Is your matcha vegan and gluten free?

Yes. There is one ingredient in the tin, 100% ground green tea leaf, with nothing added.

02 · HOW TO MAKE IT

How to make it.

Do I need a chasen and chashaku to make matcha?

A chasen helps a lot. Without one you can use a small handheld milk frother. A chashaku is optional but makes portioning easier.

What temperature water should I use?

Around 75°C for Hikari and Shōgun, 95°C for Hōjicha.

How much matcha per bowl?

2g for Hikari, 3g for Shōgun, 2g for Hōjicha.

Can I use a milk frother instead of a chasen?

Yes, it works fine. The foam won't be as dense but the flavour comes through.

Why is my matcha bitter or grainy?

Either the water was too hot or the matcha wasn't sifted first. Try both fixes.

How many bowls do I get from a tin?

A 30g tin gives about fifteen bowls of Hikari at 2g, or about ten bowls of Shōgun at 3g. Hōjicha is 2g a bowl, so about fifteen.

How long does UK delivery take?

Sent within 48 hours on Royal Mail 48. Most parcels arrive 2 to 4 working days after ordering.

Do you ship internationally?

Yes, to the EU, US, Canada, Australia, Japan, and most of Asia. Prices below exclude duties and import taxes which are paid by the recipient on delivery (except US, where we prepay tariffs).

Can I return an opened tin of matcha?

Unopened tins are returnable within 14 days. Opened tins cannot be resold for food safety reasons.

What if my order arrives damaged?

Email support@rakumatcha.com with a photo and we will replace it at no charge.

How do I track my order?

A tracking link is emailed when your parcel is dispatched.

Do you sell gift boxes?

Two. The Ritual Gift Box holds a Kyoto bowl, a tin of matcha and the tools. The Tasting Gift Box holds two tins. Both are at /collections/gift.

Are the bowls dishwasher safe?

No. Hand-wash only with a soft sponge and warm water.

Can I drink hot tea out of a Kayori bowl?

Yes. That is what they are made for.

How long does a chasen last?

Six to twelve months of daily use before the prongs droop.

How do I care for my chasen?

Rinse warm after use, never scrub. Air-dry prongs up on a kusenaoshi or any small ring stand.

Do you make bowls in other colours?

The Kayori range rotates seasonally. Sign up to our newsletter for new colour drops.
