How to brew
  1. Sift 2g of Hikari into a warm bowl.
  2. Add 70ml of just-cooled water at 75°C.
  3. Whisk briskly in a W or M motion for 20 to 30 seconds.
  4. Drink immediately, while the foam is still bright and dense.

How long does an opened tin stay fresh?
Sealed and stored in a cool, dark place, an opened tin keeps its brightness for about four weeks. Refrigerate to extend.
Do I need a chasen to make matcha?
It helps. A chasen creates the dense foam that defines a properly whisked bowl. A handheld milk frother is a workable substitute.
What's the difference between Hikari and Shōgun?
Hikari is bright, sweet, and vegetal. Best as a pure bowl. Shōgun is bolder and more structured, built to hold up in lattes.
Is Hikari good for matcha lattes?
Yes. The richness holds up well against milk. For an even bigger latte body, reach for Shōgun.
