FROM YAME AND UJI

From a farm and a tea house in Yame and Uji.

Okumidori comes direct from a family farm in Yame, Fukuoka, growing award-winning tea for generations. Hōjicha comes from a Uji tea house with nearly two centuries of expertise: first-harvest tencha, slow-roasted until it turns amber. We pack both in London every week.

FREQUENTLY ASKED

Questions, answered.

How long does an opened tin stay fresh?
Sealed and stored in a cool, dark place, an opened tin keeps its brightness for about four weeks. Refrigerate to extend.
Do I need a chasen to make matcha?
It helps. A chasen creates the dense foam that defines a properly whisked bowl. A handheld milk frother is a workable substitute.
What's the difference between Okumidori and Hōjicha?
Okumidori is our single-cultivar matcha from Yame: very nutty, with a toasted sesame finish and no bitterness, best as a bowl or a latte in the morning. Hōjicha is roasted tencha, toasty and mellow, and lower in caffeine, so most people drink it in the evening.
Can I make lattes with both?
Yes. Whisk 2 to 3g of Okumidori with 60ml of water at about 80°C, or 3g of Hōjicha with 60ml of water at 80°C, then top up with 150 to 200ml of milk.
Where is the matcha shipped from?
We pack and ship every order from our London studio. Royal Mail 48 within the UK. Free on orders over £40, otherwise £1.50.
